Pineapple Pork Stir Fry

INGREDIENTS
- 3/4 cup jasmine rice
- 10 oz ground pork
- 2 scallion stalks
- 1 large green or yellow pepper
- 4 ounces of cut pinapples in liquid
- 3 tbsp hoisin sauce
- 1/2 tsp siracha
- 1/2 tbsp cornstarch
- 2 tbsp butter
- 1 tbsp sesame seeds
DIRECTIONS
1. Add rice and 1 1/2 cups of water to a small pot, salt, and bring to a boil. lower to a simmer, cover, and cook over low heat until water is absorbed and rice is cooked through (14-18 mins). check often.
2. Meanwhile, thinly slice scallions, separating the greens from the whites. Dice the pepper. Drain pineapple over a small bowl, reserving
juice. Whisk in hoisin, cornstarch, siracha, and 2 TBSP water with the pineapple juice.
3. Heat a drizzle of oil in a large pan over medium-high heat. Add pork and season with salt and pepper. Cook, breaking up meat into
pieces, until browned, 3-4 minutes (remove excess grease).
4. Push pork to one side of pan and add pepper to empty side. Cook, stirring, until pepper is lightly browned and softened, 2-3 minutes. Add scallion whites and pineapple to side of pan with green pepper. Cook, stirring occasionally, until pineapple is lightly browned, 1-2 minutes more.
6. Pour hoisin mixture into pan with stir-fry and mix until pork is cooked through. Stir in 1 TBSP butter. Season with salt and pepper, to taste.
7. When rice is ready, fluff with fork. Add 1 tbsp of butter and scallion greens; mix to combine. Divide rice between two bowls, top with pork stir fry and garnish with sesame seeds. Enjoy!
