INGREDIENTS
- 6 eggs
-1 large tomato
-1 large sweet onion
- 4 large cloves garlic
- 5-6 mini sweet peppers (or one large sweet
red pepper)
- 1 cup feta chese, crumbled
- 1 tbsp italian parsley
- salt & pepper, to taste
- 1/2 tbsp olive oil for cooking
DIRECTIONS
1. Peel the outer layers of the onion & dice into
small pieces. Mince the garlic cloves. Dice
tomato, and slice the pepper into small
rounds (or thin trips, ~1 inch long).
2. Heat a large non stick pan over low-medium heat and drizzle olive oil. Add the diced sweet onion and cook on low heat for ~5 minutes. Then, add the sliced sweet pepper and cook on low-medium heat until pepper is softened and onion is translucent, another 5-6 minutes.
3. Add in chopped tomatoes, stir, and cook 2 more minutes, until tomato is softened.
4. In the meantime, whisk your eggs in a bowl with salt & pepper.
5. Add the whisked eggs and cook over low-medium heat, stirring constantly so that the eggs don’t burn.
6. When your eggs are almost done cooking, turn off heat and stir in the crumbled feta until combined. Top with chopped Italian parsley and serve with toast if desired.
