Ingredients
-2 cups mixed greens / salad
-1 cup canned chickpeas, rinsed and drained
-1 large sweet potato
-2 tbsp olive oil
-½ tsp garlic powder
-½ tsp onion powder
-½ tsp Italian seasoning
-½ tsp paprika
-Salt and pepper
Chicken Meatballs
-1 lb lean ground chicken
-½ cup sun dried tomatoes
-½ cup feta cheese, crumbled
-1 egg
-½ cup panko breadcrumbs
-1 shallot
-2 green onions
-½ cup parsley
-Zest of a lemon
-Salt and pepper to taste
-2 tbsp olive oil
Tzatziki Can be replaced by store bought
-½ cucumber
-1 cup thick whole milk Greek yogurt
-1 tablespoon fresh lemon juice
-1 tablespoon extra-virgin olive oil
-1 garlic clove, grated
-¼ teaspoon sea salt
Directions
1. Preheat the oven to 400°F (200°C).
2. Peel and chop the sweet potatoes. Place the chickpeas and sweet potatoes in a large bowl and add olive oil, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. Toss until evenly coated. Transfer to a baking sheet and roast in the oven for 15 minutes.
3. Meanwhile, chop green onions, shallot, and parsley. In a bowl, combine all the chicken meatball ingredients (except olive oil). Mix until well combined. Scoop about 2 tbsp of the chicken mixture and use your hands to form small patties.
4. Heat olive oil in a large pan over medium-high heat. Add half of the meatballs and cook for 3–4 minutes on each side, until golden brown. Set aside and repeat until you are finished with all of them.
5. Make tzatziki sauce. Grate the cucumber with a fine grater. Place the cucumber on a towel or sieve and gently squeeze out excess water. In a medium bowl, combine the grated cucumber with the rest of the tzatziki ingredients.
6. Divide the mixed greens between two bowls. Top with roasted sweet potatoes, chickpeas, chicken meatballs, and tzatziki. Enjoy!
