INGREDIENTS
- 2 chicken breasts
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp olive oil
- 4 large flour tortillas
- 1 cup lettuce
- 1 avocado, diced
- 1/2 cup tomatoes
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, diced
- 1/4 cup ranch dressing
- 1/2 cup cheddar cheese, shredded
- 1 lime, juiced
- Salt and pepper, to taste
DIRECTIONS
1. Heat a drizzle of oil in a pan or grill over medium-high.
2. Pound the chicken breasts to flatten them. In a bowl, mix the paprika, garlic powder, salt and pepper. Season them with the paprika mixture on both sides.
3. Add the chicken breasts to the pan and and cook until the chicken is browned on both sides. Lower the heat and continue cooking for 8-10 more minutes, or until fully cooked (minimum 165 F).
4. While chicken cooks, chop the lettuce and cilantro. Dice the avocado, tomatoes, and red onion. When chicken is done, transfer to a cutting board and cut into thick slices.
5. Divide the lettuce and chicken between 4 tortillas. next divide the avocado, ranch dressing, cheddar cheese, tomatoes, red onion, cilantro, and lime juice. Season with salt and pepper.
6. Fold the burritos and wrap them in foil or parchment paper for easy eating.
