INGREDIENTS
- 6 oz dry noodles (Asian style)
- 1 cup fresh cilantro
- 2 cloves garlic
- 1 shallot
- 1 tsp curry powder
- 1/2 tbsp chilli powder
- 1/4 cup olive oil
- 2 tbsp vegetarian mushroom sauce (vegetarian hoisin sauce)
- 1 tbsp dark soy sauce
- 2 limes, juiced
- 1 tbsp maple syrup
Toppings:
- sesame seeds, chili oil, chopped green onions
DIRECTIONS
1. Bring a large pot of water to boil and add salt. Cook noodles according to package directions. Drain, rinse with cold water, and
let it dry.
2. Chop cilantro and shallots and mince the garlic in a cutting board. Mix cilantro, garlic, shallot, curry powder, and chili powder in a
small bowl.
3. In a small pot, heat olive oil until medium high (it should reach around 350ºF, you can test with a piece of bread, it should sizzle when it hits the oil).
4. Pour the hot oil over the bowl with the cilantro and spices. Let it sizzle for a few seconds. Next, add the mushroom sauce, soy
sauce, lime juice and maple syrup.
5. Add the noodles and mix well. Serve warm with sesame seeds, chili oil and chopped
green onions.
