INGREDIENTS
- 1/2 lb peeled shrimp
- 8 oz spaghetti
- 1 lemon
- 1 zucchini
- 2 tbsp mascarpone
- 2 tbsp butter
- 4 cloves garlic
- 2 tbsp fresh italian parsley
- 2 tbsp Olive oil
- 1/2 cup parmesan cheese
- salt & pepper
DIRECTIONS
1. Bring a large pot of salted water to boil and add pasta. Cook as directed (usually around 9 mins). Reserve 1/2 cup pasta water before
draining!
2. While pasta cooks, halve zucchini lengthwise and slice into half moons. Grate or mince garlic. Zest lemon and cut lemon in half.
3. Heat 1 TBSP of oil over medium heat in a large pan. Add zucchini to pan and stir often until lightly browned, 4 mins. Add garlic and cook for two more minutes. Add salt and transfer this mixture into a bowl or plate.
4. Wipe out pan and add another TBSP of oil. Rinse shrimp under cold water and pat dry. Add shrimp to pan and stir until opaque and
cooked through, 5-6 mins. Season with salt & pepper.
5. To the pan with shrimp, add the drained spaghetti, lemon zest, juice from the lemon, butter, zucchini mixture, parmesan, and 1/4th
cup of the reserved pasta water. Stir until sauce is thickened, and turn off heat.
6. Stir in Mascarpone and chopped Italian parsley until everything is combined. Serve with additional parmesan cheese & enjoy!
