INGREDIENTS
- 10 oz ground beef
- 10 oz fresh udon noodles (or ramen noodles)
- 1 Bok Choy
- 1 Sweet Pepper
- 1/2 Carrot
- 2 Scallion stalks
- 1 cup Peas
- 1 thumb Ginger
- 1 garlic clove
- 1 tbsp olive oil for cooking
- 4 tbsp sweet soy glaze
- 2 tbsp hoisin sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
DIRECTIONS
1. Heat a drizzle of oil in a medium pan and prep veggies. Chop bok choy, slice sweet pepper and carrot, and chop the scallions separating the whites and greens. Mince the ginger and garlic.
2. Boil a pot of water and cook the noodles 2-3 minutes, as directed on the package. Set aside.
3. Add ground beef to the pan and sauté 8-10 mins, or until cooked through. Season with salt & pepper and set aside. Wipe out pan.
4. Add another drizzle of oil and add sweet pepper, carrot, and the scallion whites. Cook until softened, ~5 mins. Add bok choy, peas, ginger & garlic and cook another ~2 mins until leaves are wilted.
5. Whisk together the sweet soy glaze, hoisin, rice vinegar, and sesame oil in a small bowl.
6. To the pan with veggies, add sauce, noodles, and beef. Mix to combine, and cook on low for 2-3 mins. Salt to taste.
7. Garnish with scallion greens and sesame seeds, and enjoy.
