INGREDIENTS:
2 6-oz. salmon fillets
1/4 cup honey
1/4 cup low-sodium soy sauce
2 Tbsp. lemon juice
2 Tbsp. extra-virgin olive oil, divided
salt & black pepper
3 cloves garlic, minced
1 lemon, sliced into rounds
3 medium size potatoes
2 tsp garlic powder
1 tsp onion powder
1 tbsp olive oil
Recipe:
1. Preheat oven to 400 F.
2. Cut potatoes into 1/2 inch cubes and spread over a baking tray (use parchment paper to prevent sticking and for easy cleanup). Drizzle potatoes with 1 tbsp olive oil, garlic powder, onion powder, salt & pepper to taste. Bake for 25-35 minutes until browned and cooked through.
3. In a medium bowl, whisk together honey, soy sauce, lemon juice and red pepper flakes. Pat the salmon fillets dry.
4. In a medium skillet over medium-high heat, heat one tablespoon of oil. When oil is hot (but not smoking) add salmon (skin-side down) and season with salt and pepper. Cook salmon until deeply golden, about 6 minutes, then flip over and add remaining tablespoon of oil.
5. Add garlic to the skillet and cook until fragrant, 1 minute. Add the honey mixture and sliced lemons and cook until sauce is reduced by about 1/3. Baste salmon with the sauce.
6. Garnish with sliced lemon and serve with roasted potatoes on the side.
