Ingredients
• ½ cup of brown rice
• 3 cups of skim milk
• 2 tablespoons of stevia
• 1 lemon peel
• 1 cinnamon stick
• 1 orange peel
• Ground cinnamon (to taste, for decoration)
Tip: Adjust the amount of sweetener to your liking, and you can always use honey or agave instead of stevia.
Directions
1. In a pot, add the 3 cups of skim milk, lemon peel, cinnamon stick, and orange peel and heat it over medium heat. Once warm, add the brown rice. Bring it to a simmer and cook for about 20–25 minutes, stirring frequently, or until the rice is tender and has absorbed most of the milk.
2. Once the rice is cooked, add the 2 tablespoons of stevia. Stir well to dissolve it evenly.
3. Remove the lemon and orange peels and the cinnamon stick. Serve the rice pudding in individual bowls and sprinkle with ground cinnamon to taste.
