INGREDIENTS
- 2 x 4-oz chicken breasts, boneless and skinless
- ¼ cup Korean hot sauce (like Gochujang)
- 2 tbsp honey
- 2 tbsp soy sauce
- 2 tbsp toasted sesame oil
- 1 cucumber
- ¼ cup cilantro leaves
- 2 burger buns
Coleslaw:
- 1 cup red cabbage
- 1 carrot
- ½ cup cilantro, chopped
- ½ cup Greek yogurt
- 1 lime
- Salt and pepper
DIRECTIONS
1. Bring a pot with water to boil with 1 tbsp salt and add the chicken breasts (cut in 3-4 pieces to make cooking faster). Boil for 15 minutes, remove from the water and let it cool.
2. While chicken boils, slice cucumber into thin rounds and and chop cilantro. Finely shred or slice the cabbage, grate carrot.
3. In a medium bowl, combine cabbage, carrot, half the cilantro, greek yogurt, juice from one lime, and salt and pepper to taste (this is your coleslaw!).
4. In another medium / large bowl, combine the Korean hot sauce, honey, soy sauce and sesame oil. Mix well, and set aside 2 tbsp for
topping the burger. Shred the chicken intro strips and add it to the bowl with the sauce - mix to combine.
5. Toast the buns and assemble with shredded chicken, topping with coleslaw, cucumber, cilantro and extra Korean sauce. Enjoy!
