Sushi Salmon Bites

INGREDIENTS
- 2 sheets nori paper
- 1 ½ cups cooked sushi rice, cooled
- ½ lb sushi grade salmon*
- 2 tbsp sesame oil
- 1 tbsp low sodium soy sauce
- 2 scallions
- 1 tbsp Sriracha sauce
- ½ avocado
- 2 tsp black sesame seeds
Spicy Mayo:
- ¼ cup kewpie mayo
- 2 tsp Sriracha sauce
- 1 tsp honey
DIRECTIONS
1. Preheat the oven to 400ºF.
2. Spray a 6 count muffin baking tray with cooking spray or add paper liners. Cut each nori sheet in 4 pieces. Spray them with a bit of
water and push each one in the muffin spaces.Top with the sushi rice and bake for 10 minutes at the higher rack.
3. Dice the scallions and avocado. Cut the salmon into small cubes. In a bowl, combine the the salmon, sesame oil, low sodium soy
sauce, scallions and Sriracha sauce.
4. Remove the bites from the oven and top them with the salmon, spicy mayo, avocado and sesame seeds.
5. Mix the mayo, siracha, and honey to make your spicy mayo - drizzle over the salmon bites and enjoy!
