INGREDIENTS
-3 eggs
-1 cup flour
-1 cup sugar
-1 TSP baking soda
-1 tsp squeezed lemon juice
-4 small green apples (or 3 large green apples)
-2 tbsp powdered sugar for coating
-1/2 TBSP butter to coat pan
DIRECTIONS
1. Preheat the oven to 350F
2. Blend the eggs, sugar, and flour in a blender or electric mixer. The mixture should feel thick.
3. Add a squeeze of lemon to 1 tsp of baking soda on a big spoon until it gets foamy; then add in to the mixture, and blend.
4. Peel the apples and slice them apples into thin, half moon shapes. Add the slices to the blended mixture and gently combine with a spoon until evenly distributed.
5. Dust your pie pan! First, using a stick of butter, coat the bottom and sides of the pie pan. Then, sprinkle flour and move pan around to coat evenly. Shake off the excess; you should be left with a thin coat of flour to prevent the cake from sticking.
6. Pour in the batter and bake for 40-50 mins, or until a toothpick comes out mostly dry (there may still be some moisture because of the apple).
7. Sprinkle with powdered sugar and enjoy!
